Ingredients

  • Basmati rice 1 cup
  • Saffron ½ teaspoon
  • Cinnamon 1 piece
  • Ground clove 6 pieces
  • Brown Sugar ½ cup
  • Cardamom 1 teaspoon
  • Ghee 2 tablespoons
  • Pistachios 3 tablespoons
  • Light Raisins, Seedless 3 tablespoons
  • Salt to taste

Step-by-Step Guide

Step 1

Soak the saffron in 37.5 ml of boiling water for 10–15 minutes and strain.

Step 2

In a thick-bottomed pot, bring 480 ml of water to a boil, add the rinsed rice, salt, the cinnamon stick, and cloves, bring back to a boil, and cook on low heat covered for 20 minutes.

Step 3

Then remove the pot from heat and let the rice sit covered for 5 minutes.

Step 4

In a small pot, combine the saffron water, coarsely crushed cardamom seeds, and brown sugar, place the pot over medium heat and cook, stirring, until the sugar dissolves.

Step 5

Reduce the heat slightly and simmer the resulting syrup for another minute. Rinse the raisins.

Step 6

Pour the syrup into the rice and cover the pot.

Step 7

Heat the ghee in a saucepan until hot but not smoking, and fry the pistachios and raisins until the nuts turn golden.

Step 8

Pour the oil with the pistachios and raisins into the rice and gently fluff the rice with a fork.

Step 9

Transfer the rice to a wide dish and garnish with chopped pistachios.
