  • Rice 1½ cups
  • Peeled chestnuts 5 oz
  • Mulled Wine 1 tablespoon
  • Toasted Sesame 2 tablespoons
  • Salt to taste

Step-by-Step Guide

Step 1

Remove the chestnuts from the syrup, dry them, cut in half, place in boiling salted water, and cook for 30–40 seconds, then dry again.

Step 2

Rinse the rice in several waters and dry it.

Step 3

Pour 2 cups of water, 2 teaspoons of chestnut syrup, and wine over the prepared rice and cook until partially done.

Step 4

Add the chestnuts to the porridge and keep covered on high heat for 20–30 minutes.

Step 5

Remove the pot from the heat and let the rice sit covered for 15 minutes.

Step 6

Before serving, stir the rice with a spatula, portion onto plates, and sprinkle with a mixture of sesame seeds and salt.

Step 7

This dish can be served as a standalone meal or as a side dish to fish or seafood.
