Flounder with Shrimp Sauce
Ingredients
- Flounder 0 lbs
- Dry White Wine 5 fl oz
- Butter 4 tablespoons
- Wheat Flour 2 tablespoons
- Shrimp 5 oz
- 33% Cream 5 fl oz
- Chopped almonds 4 tablespoons
- Ground Black Pepper to taste
- Salt to taste
Step-by-Step Guide
Step 1
Pour wine over the fish fillet, lightly salt and pepper it, then bake in the oven at 340°F for 15 minutes.
Step 2
Set aside a few shrimp for garnish, chop the rest and blend with 2 tablespoons of butter.
Step 3
In the remaining butter, sauté the flour while stirring for 2-3 minutes, then add the cream and the juice that formed while cooking the fish. Reduce the sauce until thickened. Lower the heat, add the shrimp mixture, spices, and 3 tablespoons of chopped almonds.
Step 4
When serving, place the fish fillet on a plate, drizzle with sauce, garnish with shrimp, and sprinkle with the remaining nuts.
