Flounder with Pepper Puree
Ingredients
- Flounder 5 oz
- Orange Bell Peppers 2 pieces
- Shallot 2 heads
- Vegetable Oil 2 tablespoons
- Bouillon cube 1 piece
- Sour Cream 5 tablespoons
- Water ½ cup
- Dry White Wine 2 tablespoons
- Cayenne Pepper a pinch
- Ground Black Pepper to taste
- Salt to taste
Step-by-Step Guide
Step 1
Remove the seeds from the peppers and slice them. Combine water and wine, bring to a boil, and dissolve the bouillon cube. Add the peppers and shallots, sliced into rings, and cook for 15 minutes.
Step 2
Drain the water and puree the vegetables. Mix the puree with sour cream, and season with salt and pepper.
Step 3
Drizzle the fish fillets with oil, sprinkle with salt and pepper, and fry for 5 minutes on each side. Plate the puree on serving dishes and top with the fish. Garnish with strips of red and yellow peppers, fresh thyme, or parsley.
