  • Flounder 4 pieces
  • Fresh basil leaves 25 oz
  • Celery stalk 1 piece
  • Carrot 1 piece
  • Leek ½ piece
  • Ground Black Pepper to taste
  • Salt to taste
  • Butter 5 tablespoons
  • Dry White Wine 5 fl oz
  • Fish Oil 5 fl oz
  • Sour Cream 5 oz
  • Wheat Flour 1 tablespoon
  • Chopped Sage Leaves 1 tablespoon
  • Crab Meat 5 oz

Step-by-Step Guide

Step 1

Serve the fillet on a bed of spinach, drizzled with sauce.

Step 2

Blanch the spinach in salted water for 3 minutes, then drain in a colander. Preheat the oven to 390°F. Prepare the vegetables: wash and chop them. Blanch in salted water and drain in a colander.

Step 3

Season the fillet with salt and pepper, brush with 2 tablespoons of butter. Grease a baking tray with butter and place the fillet in it, then pour the wine and stock over the fish. Bake for 6 minutes.

Step 4

Lightly toast the flour in 2 tablespoons of butter until golden. Pour in the liquid left after baking the fish. Stirring, bring to a boil. Add the vegetables, parsley, and crab meat.
