Ingredients
- Flounder 2 pieces
- Leek 1 head
- Flower Salt to taste
- White Pepper (whole) to taste
- Grated Pecorino Pepato Cheese 2 tablespoons
- Tomatoes 2 pieces
Step-by-Step Guide
Step 1
Prepare the flounder. Remove the top skin.
Step 2
Cut along the backbone, in half.
Step 3
Salt, pepper, and let sit for 30 minutes to allow the fish to absorb the spices.
Step 4
Chop the tomatoes and leek. Mix and season.
Step 5
Preheat the oven to 410°F.
Step 6
Line a baking tray with foil and brush with olive oil.
Step 7
Place the fish on the tray and top with the tomatoes and leek, then drizzle with olive oil.
Step 8
Bake in the oven for 15–20 minutes.
Step 9
Five minutes before it's done, sprinkle with Parmesan.
