Flatbread with Spicy Zucchini
Ingredients
- Courgette 1 piece
- Harissa 2 teaspoons
- Beans ¼ cup
- Hummus 2 tablespoons
- Scallions 1 stalk
- Tahini 1 teaspoon
- Garlic 1 clove
- Meyer Lemon Juice 1 tablespoon
- Yogurt powder 1 tablespoon
- Pita 1 piece
- Olive Oil 2 teaspoons
Step-by-Step Guide
Step 1
Slice the zucchini into thin pieces. Mix the zucchini with harissa paste and olive oil, and season.
Step 2
Sauté in a preheated pan for 2 minutes on each side or until cooked through. Transfer to a plate and set aside.
Step 3
Cook the beans in boiling water for 2 minutes, rinse under cold running water, then peel. Place the beans, hummus, and green onion in a small bowl and mix well.
Step 4
In another bowl, combine tahini, garlic, lemon juice, and yogurt.
Step 5
Toast the pita and cut it to create 2 pockets. Spoon hummus into each pita, then add the spicy zucchini and drizzle with the yogurt sauce.
