Ingredients
- Veal Shoulder 10 oz
- Potato 1 piece
- Romaine lettuce 0 oz
- Iceberg Lettuce 0 oz
- Olive Oil 0 fl oz
- Malt Vinegar 0 fl oz
- Dijon Mustard 0 oz
- Chicken Egg 1 piece
- Ocean salt to taste
- Ground Black Pepper to taste
- Garlic 1 head
- Unleavened dough 2 slices
Step-by-Step Guide
Step 1
Make minced meat from the veal, season with salt and pepper to taste, shape into round patties (4–5 cm), wrap in parchment paper, and refrigerate for at least 30 minutes.
Step 2
Tear the lettuce by hand (not finely) and slice the tomato into thin rings, drizzle with the remaining olive oil and wine vinegar.
Step 3
Prepare the poached eggs and place them on a towel to dry.
Step 4
Heat a grill pan and place the patties directly from the refrigerator onto the pan (the finished patty should be 155°F inside) for 6 minutes on each side, then let the patty rest for 3–4 minutes.
Step 5
Cut a circle in the bread using a glass, toast it on the grill pan, and rub it with garlic.
Step 6
Assemble the burger from bottom to top: bread, lettuce, tomato, patty, mustard, egg.
