Ingredients

  • Blue Ling Fillet 30 oz
  • Milk 15 fl oz
  • Onion 1 head
  • Butter 0 oz
  • Wheat Flour 2 tablespoons
  • Ground clove 2 pieces
  • Nutmeg a pinch
  • Chopped Sage Leaves 2 tablespoons
  • Pea shoots 5 oz
  • Salad Potatoes 25 oz
  • Cheshire Cheese 3 tablespoons

Step-by-Step Guide

Step 1

Place the fish in a skillet and pour in the milk, reserving 2 tablespoons. Add finely chopped onion and cloves, bring to a boil. Reduce heat and cook for 5 minutes, until the fish is fully cooked.

Step 2

Preheat the oven to 355°F. Transfer the fish to a plate and let it cool. Break it into small pieces. Save the milk and onion from the skillet.

Step 3

Melt half of the butter in a saucepan, add the flour and cook, stirring, for 1 minute. Remove from heat and add the milk from the fish, mixing well. Return to heat and cook until the sauce comes to a boil and thickens slightly. Then cook for another minute. Let cool, then add nutmeg, parsley, and peas. Season with salt. Transfer the fish to a baking dish and pour the sauce over it.

Step 4

Boil the quartered potatoes in salted boiling water. Drain and add 2 tablespoons of hot milk and the remaining butter. Mash and add grated cheddar.

Step 5

Spread the potato over the fish and smooth it out. Bake in the oven for 30 minutes.
