
Fish Under Rice with Onions

Description
Boil the rice according to the recipe 'Rice in Milk'. Fillet of sea fish is best suited for this recipe.
Ingredients
- Sole fillets 20 oz
- Rice 1 cup
- Onion 1 piece
- Carrot 1 piece
- Meyer Lemon Juice 2 tablespoons
- Butter 5 oz
- Vegetable Oil 2 tablespoons
- Water ½ cup
Step-by-Step Guide
Step 1
Cut the fillet into portion-sized pieces. Season with salt, pepper, and drizzle with lemon juice.
Step 2
While the fish is marinating, boil the rice until ready.
Step 3
Slice the onion into half rings and grate the carrot. Sauté in vegetable oil.
Step 4
Place the fish at the bottom of a thick skillet, then add the onion and carrot. Top with rice. Place pieces of butter on the rice. Pour in water.
Step 5
Cover the skillet with foil.
Step 6
Bake for 30 minutes in the oven at 355°F.
Step 7
Serve in the skillet in which it was cooked.
