Ingredients

  • Lemon 2 pieces
  • Mayonnaise 5 oz
  • Scallions 5 oz
  • Horseradish Leaves 0 oz
  • Dill 0 oz
  • Sourdough Bread 4 pieces
  • Skin-on dorado fillet 10 oz
  • White Cabbage 5 oz
  • Chicken Egg 1 piece
  • Radish 0 oz
  • Carrot 0 oz
  • Olive Oil 2 spoons
  • Ground Black Pepper to taste
  • Salt to taste

Step-by-Step Guide

Step 1

Grate the zest from the lemons and squeeze out their juice.

Step 2

In a bowl, mix together the zest, two tablespoons of lemon juice, mayonnaise, half of the chopped green onions, horseradish, and a third of the chopped dill.

Step 3

Chop the bread in a food processor. Transfer a cup of crumbs to a bowl.

Step 4

Pass the fish through a food processor. Transfer to a bowl with the breadcrumbs. Add an egg, a tablespoon of horseradish-dill sauce, and half of the remaining onion, and mix gently. Shape the mixture into four round patties and coat them in the remaining breadcrumbs.

Step 5

Combine the shredded cabbage, carrot, and radish with three tablespoons of sauce, two tablespoons of lemon juice, and the remaining chopped dill. Season with salt and pepper.

Step 6

Sear the patties for two minutes on each side. Serve with salad and sauce.
