  • Sole fillets 20 oz
  • Onion 1 head
  • Orange Bell Peppers 3 pieces
  • Courgette 2 pieces
  • Eggplants 3 pieces
  • Tomatoes 4 pieces
  • Olive Oil 5 fl oz
  • Spiced Tomato Juice 5 fl oz
  • Garlic 2 cloves
  • Thyme 1 teaspoon
  • Ground Black Pepper to taste
  • Salt to taste

Step-by-Step Guide

Step 1

Cut the fish fillet into small pieces, season with salt and pepper. Peel the onion and chop it into small cubes, wash the bell pepper, remove the stem, clean out the seeds, and chop into small cubes. Peel the zucchini and slice it into thin rounds. Cut the eggplants into cubes and the tomatoes into wedges.

Step 2

Sauté the onion in olive oil until golden brown, then add the finely chopped or pressed garlic. Add the eggplant, bell pepper, and zucchini to the pan with the onion and fry for 5 minutes, seasoning with salt and adding thyme.

Step 3

Layer the vegetables and fish fillet in pots, pour in the tomato juice, cover with lids, and stew in the oven until the fish is cooked through.
