Description

If you don't have a fish pot with a rack on hand, you can cook the fish in a regular frying pan. In this case, when the fish is ready, you need to remove it from the liquid with a slotted spoon and place it across the pan in a colander.

  • Lemon ½ piece
  • Bay leaf 1 piece

Step 1

In a pot, bring the milk to a boil, remove from heat, and let it cool slightly.

Remove the rack from the fish pot, pour in the milk, add the peeled lemon sliced into rounds, the bay leaf, and a pinch of salt, then pour in 1.5 liters of water.

Step 3

Place the fish (halibut, haddock, or whiting will work) on the rack and return it to the pot. Make sure the liquid does not evaporate and that the fish is always fully covered. In some cases, you may need to increase the amount of ingredients used.

Step 4

Cook the fish until the flesh easily separates from the bone. This recipe is often used for cooking turbot and skate.
