Ingredients

  • White fish 5 lbs
  • Spices to taste
  • Sugar 0 oz
  • Pesto 0 fl oz
  • Butter 0 oz
  • Garlic 6 cloves
  • Meyer Lemon Juice 0 fl oz
  • Tomatoes 3 pieces
  • Basil to taste
  • Onion 1 head

Step-by-Step Guide

Step 1

Clean the fish, leaving the head and tail. Cut along the belly and remove all bones.

Step 2

Sprinkle spices inside the fish.

Step 3

Mix the pesto, butter, lemon juice, and garlic. Spread the mixture thickly inside the fish, top with slices of tomatoes, and sprinkle with spices. Then add basil and onion, sliced into rings. Cover with the other half.

Step 4

Place the fish on a baking paper and wrap it. Then wrap the fish in five layers of newspaper and tie it with string. Soak the newspaper in water.

Step 5

Heat the grill. Make a depression in the coals and place the fish inside. Top with warm coals.

Step 6

Cook slowly for about 45–60 minutes. When the fish is ready, the outer newspaper will burn.

Step 7

Carefully remove the fish and unwrap.
