Fish and Rice Pie

Ingredients
- Unleavened dough 20 oz
- Sole fillets 20 oz
- Rice 1 cup
- Parsley 1 bunch
- Scallions 1 bunch
- Lemon ½ piece
- Butter 2 tablespoons
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Boil the rice in water until cooked according to the package instructions, then let it cool.
Step 2
Squeeze the juice from the lemon.
Step 3
Wash all the greens, dry them, and chop finely.
Step 4
Cut the fish fillet into small pieces, season with salt and pepper, drizzle with lemon juice, mix, and let sit for 15 minutes.
Step 5
In a bowl, mix the fish pieces, greens, rice, and onion, lightly season with salt and pepper.
Step 6
If the fish is of a type like cod, white and dry, add 2 tablespoons of melted butter to the filling.
Step 7
Divide the dough into 2 parts and roll them out slightly into sheets.
Step 8
Place one sheet in a baking dish, spread the fish filling evenly on top, cover with the second sheet, seal the edges, and pinch them together.
Step 9
Make several long cuts on top of the dough for steam to escape.
Step 10
Bake the pie in the oven at 355°F for 30–40 minutes.
