Fettuccine with Mushroom, Tomato, and Veal Tail Ragù
Ingredients
- Pasta (corkscrew) 5 oz
- Porcini Mushrooms 0 oz
- Beef hoof 5 oz
- Onion 30 pieces
- Sun-Dried Tomatoes 0 oz
- Grated Pecorino Pepato Cheese 0 oz
- 33% Cream 0 fl oz
- Demi-Glace Sauce 0 oz
- Butter 0 oz
- Salt to taste
Step-by-Step Guide
Step 1
Cook the fettuccine pasta until al dente.
Step 2
Sauté the chopped porcini mushrooms with onions, add the chopped braised beef tail, halved cherry tomatoes, cream, half of the cheese, demi-glace sauce, and butter. Simmer over medium heat for 15–20 minutes.
Step 3
At the end, add the fettuccine and mix well.
Step 4
Serve on a plate and garnish with the remaining cheese.
