Ingredients
- Sole fillets 20 oz
- Onion 3 pieces
- Carrot 3 pieces
- Pickled Chanterelles 10 oz
- Vegetable Oil to taste
- Grated Pecorino Pepato Cheese 0 oz
- Mayonnaise to taste
- Spices to taste
Step-by-Step Guide
Step 1
Cut the fish into pieces, sprinkle with spices (I use 'Lemon Pepper' seasoning) and let it sit for 30 minutes.
Step 2
Meanwhile, slice the onion into half-rings and grate the carrot on a coarse grater, sauté in vegetable oil, adding spices.
Step 3
Wash the mushrooms, dry them, and sauté in vegetable oil.
Step 4
Layer the vegetables in a baking dish. Place the fish on top of the vegetables, followed by the sautéed mushrooms. Add mayonnaise and grated cheese on top. Bake in an oven preheated to 390°F for about 20 minutes.
