Escalope in Beer Sauce
Ingredients
- Veal Escalope 4 pieces
- Pork fat 5 oz
- Onion 2 heads
- Carrot 2 pieces
- Wheat Flour 2 tablespoons
- Dark Ale 25 fl oz
- Salt to taste
- Ground Black Pepper to taste
- Celery salt to taste
Step-by-Step Guide
Step 1
Melt half of the lard in a skillet and sauté the finely chopped carrots and onions, then remove them.
Step 2
Add more lard to the skillet and fry the fillets over high heat on both sides, then return them to the skillet with the onions and carrots, draining off excess fat.
Step 3
Heat the remaining lard, sprinkle with flour, sauté, and pour in the beer.
Step 4
Add the sautéed meat with onions and carrots to the sauce, season with salt and pepper. Simmer over medium heat, covered, for 30 minutes.
Step 5
Serve with noodles and dark beer.
