  • Smoked haddock fillet 15 oz
  • Milk 5 fl oz
  • Broccoli 5 oz
  • Potato 10 oz
  • Parsley 0 oz
  • Wheat Flour 4 spoons
  • Chicken Egg 3 pieces
  • Breadcrumbs 5 oz
  • Safflower Oil 2 spoons
  • Bay leaf 1 piece

In a small pot, bring water to a boil, adding a pinch of salt, and then add the peeled and diced potatoes. Cook for about ten minutes, then add the broccoli florets. Continue cooking everything together until done.

While the vegetables are boiling, remove the skin from the salmon fillet, carefully take out any bones (a culinary tweezers is best for this purpose), and then cut the fish into small pieces. Finely chop the parsley.

Pour the milk into a small saucepan and place it over heat. Once the milk is warmed, add the pieces of fish and the bay leaf, bring to a boil, and then immediately remove from heat. Take out the bay leaf and let the fish cool in the milk. Then, remove the fish from the milk and drain well in a colander.

Drain the cooked potatoes and broccoli in a colander, gently dry them, then transfer to a bowl and mash them into a puree — you can do this manually with a fork or whisk, or you can lightly blend them with an immersion blender. In a separate large deep bowl, place the pieces of fish.

Add the puree, chopped parsley, two tablespoons of flour, and one egg to the bowl with the fish. Season with salt and pepper to taste and mix the mixture thoroughly until smooth. If the mixture is too thick, add a little of the milk in which the fish was cooked, and stir until you achieve a paste-like consistency.

Place two tablespoons of flour, two lightly beaten eggs, and breadcrumbs in three separate deep plates. From the resulting mixture, shape twelve small patties and form them into round shapes. Dip each patty on both sides first in the flour, then in the egg, and finally in the breadcrumbs.

Preheat the oven to 355°F, place a greased baking dish in the oven, and heat it well. Transfer all the patties to the dish and bake in the oven for ten minutes, then flip them over and roast for another ten minutes.

As soon as the patties are evenly browned on both sides, remove the dish from the oven and let it cool slightly. Serve the patties hot directly in the dish or transfer them to plates, adding a side dish of your choice.
