Eggplants with Nuts and Prunes in Cheese Sauce
Main Dishes • Greek
Description
The dish is delightful even without the cheese sauce. It can be made without it.
Ingredients
- Eggplants 2 pieces
- Walnuts 0 oz
- Brazil Nuts 0 oz
- Prunes 5 oz
- Melted Cheese 0 oz
- Aged gouda cheese 0 oz
- Butter 1 tablespoon
- Wheat Flour 1 teaspoon
- Irish Whiskey 0 fl oz
- Honey 2 tablespoons
- Vegetable Oil 0 fl oz
Step-by-Step Guide
Step 1
Wash the eggplants and cut them into slices, lightly fry them in a deep skillet with vegetable oil.
Step 2
Chop the nuts finely and cut the prunes into large pieces. Add the prune-nut mixture, honey, whiskey, and a little water to the eggplants.
Step 3
Add salt and spices to taste (such as rosemary).
Step 4
Simmer on low heat for a few minutes until the whiskey evaporates and the eggplant absorbs the aroma and flavor of the prunes, honey, and nuts.
Step 5
For the cheese sauce: melt any cheese (in my case, Gouda and mozzarella) in a saucepan with butter over low heat.
Step 6
Continuously whisk the melted cheese, then add flour, salt, and a little water. Use enough water to achieve the desired consistency of the sauce.
Step 7
Add the sauce to the eggplants.
