Eggplants stewed with minced meat and rice
Ingredients
- Eggplants 2 pieces
- Tomatoes 3 pieces
- Lean Beef 20 oz
- Orange Bell Peppers 1 piece
- Rice 1 cup
- Garlic 2 cloves
- Herbs 1 bunch
- Ground Black Pepper to taste
- Salt to taste
Step-by-Step Guide
Step 1
Boil the rice.
Step 2
Cut the eggplants into cubes and sauté in olive oil.
Step 3
In another pan, sauté the ground beef, add the chopped tomatoes and pepper, and season with salt and pepper to taste.
Step 4
Transfer the meat and vegetables to a pot, add the sautéed eggplants and boiled rice.
Step 5
Add the chopped herbs and squeeze in the garlic.
Step 6
Cover the pot with a lid and simmer on low heat for about 10 minutes. If necessary, add a little water or broth if it starts to burn.
Step 7
Serve with sour cream.
