- Eggplants 3 pieces
- Lime Juice 3 tablespoons
- Soy Sauce 3 tablespoons
- Brown Sugar 2½ tablespoons
- Minced garlic 3 cloves
- Rice Noodles 5 oz
- Lettuce leaves 8 pieces
- Carrot 10 oz
- Chopped Mint Leaves 0 oz
- Chopped roasted peanuts 0 oz
Step-by-Step Guide
Step 1
Heat the oil in a wok over medium-high heat.

Add the eggplants and sauté for 20-25 minutes until the vegetables are soft and golden brown.
