Description

It's better to choose larger eggplants for easier wrapping of the filling.

Ingredients

  • Eggplants 2 pieces
  • Orange Bell Peppers 2 pieces
  • Potato 1 piece
  • Garlic 4 cloves
  • Feta cheese 5 oz
  • Vegetable Oil to taste

Step-by-Step Guide

Step 1

Slice the eggplants and fry them in a preheated skillet. Then add the peppers and fry them as well. Let cool.

Step 2

Peel the skin off the fried peppers and remove the seeds, then chop them coarsely. Prepare a container for the terrine by lining it with plastic wrap.

Step 3

In the container, layer the eggplant petals, then alternate layers of garlic, peppers, feta cheese, and sliced tomato.

Step 4

When the filling is finished, fold the free ends of the eggplant petals towards the center, wrap in plastic wrap, and place a weight on top for a few hours.

Step 5

Drain the liquid that forms, unwrap the plastic wrap, and turn the finished terrine onto a plate.
