Eggplant Soup with Beef
Ingredients
- Eggplants 1 piece
- Tomatoes 4 pieces
- Onion 1 head
- Potato 1 piece
- Passata Tomato Sauce 0 oz
- Tkemali (plum sauce) 1 tablespoon
- Adjika to taste
- Salt to taste
- Khmeli-suneli to taste
- Beef 20 oz
- Red Long Chili Peppers 1 piece
Step-by-Step Guide
Step 1
Take beef on the bone — 500–600 grams for a large pot (5 liters). Start boiling and add salt.
Step 2
Pour oil into a skillet. Chop the onion, tomatoes, and pepper, and sauté them.
Step 3
After 40 minutes of boiling the beef (remember to skim off the foam), add the sautéed mixture to the pot. Also, chop the eggplant into medium cubes and add it to the soup. Add tkemali and adjika (to taste depending on spiciness).
Step 4
After 40 minutes, add the potato — 1 large potato, diced. Also, add 0.5 teaspoon of khmeli-suneli (you can add more to taste). At the same time, remove the beef and place it on a cutting board to cool. Shred the meat into small pieces.
Step 5
After 20 minutes, add the beef back to the soup. You can add fresh cilantro. Serve with sour cream to taste.
