Eggplant Kebabs

Ingredients

  • Eggplants 4 pieces
  • Lean Beef 20 oz
  • Salt to taste
  • Tomatoes 5 pieces
  • Ground clove to taste

Step-by-Step Guide

Step 1

If you are using bamboo skewers, start by soaking them in water for 5–10 minutes.

Step 2

Wash and dry the eggplants.

Step 3

Cut off the ends and slice into thick pieces (about 1.5 cm thick). Season the eggplant with salt and drizzle with olive oil.

Step 4

Season the ground beef with salt and allspice.

Step 5

Preheat the grill.

Step 6

Divide the meat into patties approximately the same diameter as the eggplant slices.

Step 7

Thread the patties onto the skewers between the eggplant slices. Also thread whole tomatoes onto the skewers. Place the eggplants with the kebabs on the hot grill and cook on all sides until partially cooked. Grill the tomatoes as well.

Step 8

Preheat the oven to 355°F.

Step 9

In a large ovenproof dish, layer the eggplants and kebabs, then place the grilled tomatoes on top. Add 1/4 cup of water to cover the bottom of the dish. Cover with aluminum foil and bake in the oven for 20–30 minutes.

Step 10

Serve with rice or lavash.
