Ingredients

  • Smoked Salmon Flavored Croutons 5 oz
  • Cod 25 oz
  • Onion 1 head
  • Chicken Egg 2 pieces
  • Garlic 2 cloves
  • Sour Cream 5 oz
  • Meyer Lemon Juice 0 fl oz
  • Fresh basil leaves 0 oz
  • Salt to taste
  • Vegetable Oil 0 fl oz
  • Ground Black Pepper to taste

Step-by-Step Guide

Step 1

Peel and finely chop the onion and garlic. Sauté in vegetable oil until golden brown. Finely chop the fresh basil leaves and place them in a small bowl.

In a blender or food processor, combine the diced cod fillet, sautéed onion and garlic, sour cream, lemon juice, and salt and pepper to taste. Blend until smooth.

In a separate bowl, mix about a quarter of the prepared minced meat with chopped basil and one egg. Transfer the remaining minced meat to another bowl and mix it thoroughly with the second egg.

Cut the smoked salmon into small pieces. Prepare a ceramic baking dish by lining the bottom and sides with parchment paper.

Spread half of the cod and egg filling in the bottom of the dish as the first layer. Then, completely layer the filling with basil on top. Next, add all the diced salmon.

Spread the remaining cod filling as the final layer and gently smooth the surface. Sprinkle with a small amount of salt and freshly ground black pepper.

Place the mold with the fish loaf into a container filled with hot water — add enough water so that the sides of the mold are covered by about 2 cm — and transfer it to a preheated oven at 390°F for forty minutes.

Remove the finished fish loaf from the oven, let it cool slightly, carefully take it out of the mold, and transfer it to a cutting board. Slice it thinly and serve while hot.
