
Dumplings with Raspberry Filling

Ingredients
- Wheat Flour 15 oz
- Chicken Egg 1 piece
- Water 1 cup
- Salt a pinch
- Sugar 1 cup
- Raspberry leaves 5 oz
- 10% cream 5 fl oz
Step-by-Step Guide
Step 1
Add the egg, salt, and gradually the water to the flour. Knead the dough. It is very important to knead for at least 10 minutes for better elasticity. Set it aside and cover.
Step 2
Set aside a few raspberries for decoration. Sprinkle the rest with sugar.
Step 3
Cut the dough into 2 parts for easier rolling, and roll it out to about 2 mm thick, dusting the surface with flour to prevent sticking. Brush with egg white to prevent them from falling apart during cooking. Traditionally, use a glass to cut out circles. Place the filling in a 1:1 ratio, and fold the dumpling.
Step 4
After boiling, place them on a dry skillet to evaporate excess moisture. This takes a couple of minutes.
Step 5
In another skillet, pour in the cream, add a couple of tablespoons of sugar, 2 teaspoons of flour, and stir constantly until slightly thickened. Once the sauce is ready, pour it over the dumplings.
