Dumplings with Potatoes and Liver

Ingredients

  • Wheat Flour 3 cups
  • Sour Cream 3 tablespoons
  • Salt ½ teaspoon
  • Water 5 fl oz
  • Salad Potatoes 5 pieces
  • Activated Baking Soda ½ teaspoon
  • Onion 1 piece
  • Veal Liver 5 oz
  • Butter 5 oz
  • Ground Black Pepper to taste

Step-by-Step Guide

Step 1

Peel the potatoes, cut them into large pieces, and boil them in salted water. Drain the water, add half of the butter to the pot, and mash the potatoes.

Step 2

Finely chop the onion and sauté it in vegetable oil until it turns a nice golden brown.

Step 3

Season the mashed potatoes with pepper, add half of the sautéed onion, and mix everything well.

Step 4

Clean the liver from membranes, boil it, and then grind it using a meat grinder. Add it to the mashed potatoes.

Step 5

Add baking soda to the sour cream and mix well.

Step 6

Combine the sour cream with baking soda and salt into the flour, mix, and while constantly stirring and adding water, knead the dough to a medium consistency.

Step 7

Knead the dough well and wrap it in plastic wrap or a bag for about 15–20 minutes to let it rest and prevent it from drying out.

Step 8

Cut off about a quarter of the dough, roll it into a sausage shape about 3 cm thick, and cut it into pieces about 1.3 cm thick. Keep the remaining dough wrapped.

Step 9

Roll the pieces of dough into thin circles. Keep the dough circles covered with a napkin to prevent them from drying out. Place a heaping teaspoon of filling in the center of each circle. Seal the edges of the dumplings tightly.

Step 10

Drop the dumplings into boiling salted water, stir gently to prevent them from sticking to the bottom, and cook for 2–3 minutes after they float to the surface.

Step 11

Remove the cooked dumplings with a slotted spoon and place them in a bowl with the remaining butter. Sprinkle the dumplings with the remaining sautéed onion, and if desired, with cracklings. Dumplings can also be served with sour cream.
