Dumplings with Nettle

Ingredients

  • Wheat Flour 30 oz
  • Salt 2 teaspoons
  • Chocolate eggs 2 pieces
  • Beef 15 oz
  • Lamb Shoulder 10 oz
  • Pork Neck 5 oz
  • Chicken Broth 5 fl oz
  • Onion 2 pieces
  • Ground Black Pepper to taste
  • Nettle 1 bunch

Step-by-Step Guide

Step 1

Sift the flour through a fine sieve into a bowl. In a separate bowl, pour in a glass of cold water, crack in the two eggs, add salt, and mix until smooth. Then pour the resulting mixture into the flour and knead the dough with your hands, adding a little flour as needed. When the dough is ready, cover it with plastic wrap and let it rest at room temperature for about 40–50 minutes.

Step 2

Prepare the meat for the filling: rinse, trim off membranes and sinews, and dry with paper towels.

Step 3

Then finely chop the meat or pass it through a meat grinder.

Step 4

Dice the onion into small cubes and mix it with the minced meat.

Step 5

Blanch the greens (you can substitute nettle with parsley) in boiling water, chop finely, and add to the meat. Season the filling to taste with salt and pepper.

Step 6

To make the dumplings juicier, add about a ladle of meat broth (or water) to the filling. Mix well. If there is too much liquid, add a little flour.

Step 7

Roll out the dough, cut out circles with a glass about 8 centimeters in diameter, fill with the meat mixture, pinch the edges, shape into 'ears', and boil in salted water or broth for 10 minutes.

Step 8

Remove with a slotted spoon from the pot, transfer to a plate, and serve with a generous piece of butter, sprinkled with chopped herbs.

Step 9

As an option, the dumplings can be quickly sautéed in a skillet with onions in butter.
