Dumplings with Cottage Cheese and Honey

Ingredients

  • Spelt flour 10 oz
  • 1% Kefir 5 fl oz
  • Chicken Eggs 2 pieces
  • Crumble Cottage Cheese 10 oz
  • Baking Soda a pinch
  • Salt to taste
  • Honey to taste

Step-by-Step Guide

Step 1

Sift the flour and make a small well. At this point, you can optionally add a little salt to taste.

Step 2

Crack the egg into the well in the flour.

Step 3

In a separate bowl, pour in the kefir and add the baking soda, just a pinch, then mix well.

Step 4

Gradually pour the kefir into the flour and knead the dough. The dough should be quite dense, so it's better not to pour all the kefir at once, as the flour absorbs the liquid gradually.

Step 5

Dust the table with flour and knead the dough on the table until it becomes soft, homogeneous, and elastic. The dough should not stick to your hands.

Step 6

Leave the dough at room temperature for about 30–40 minutes in a bowl covered with a towel to prevent it from drying out.

Step 7

Place the cottage cheese in a separate bowl, add the egg and honey. Mix thoroughly.

Step 8

Divide the prepared dough into two or three parts, rolling each part into a thin layer. Use a glass or special culinary forms to cut out circles about 10 cm in diameter.

Step 9

Place a filling in the center of each circle and seal the edges.

Step 10

Bring water to a boil, adding a little salt. Drop a portion of the formed dumplings into the boiling water, stirring gently to prevent them from sticking to the bottom of the pot and to each other.

Step 11

Once the dumplings float to the surface, cook them for about 3 more minutes.
