Description
Choose meat suitable for stewing; instead of apples, use quince according to the season. Instead of oil, it is good to use 100 grams of lamb fat.
Ingredients
- Lamb 20 oz
- Salad Potatoes 55 oz
- Tomatoes 3 pieces
- Spanish onions 3 pieces
- Pickled Apples 2 pieces
- Vegetable Oil 5 fl oz
- Orange Bell Peppers 2 pieces
- Salt to taste
- Ground Black Pepper to taste
- Basil to taste
- Turnips 2 pieces
- Garlic 2 cloves
Step-by-Step Guide
Step 1
Place a cauldron over the fire, pour in the oil, and heat it. Meanwhile, cut the meat into small pieces and slice the onions into half rings.
Step 2
Once the oil is heated, add the meat and sauté for a couple of minutes. Add salt and spices. Has the meat turned white? That's enough; do not fry it until browned.
Step 3
Cover the meat with onions, reduce the heat to medium, and tightly cover the cauldron with a lid. The meat will now stew in the onion juice for about 20-30 minutes.
Step 4
While the meat is stewing, prepare the other vegetables. Cut the carrots into thin rings, slice the tomatoes into half rings, and cut the peppers into strips.
Step 5
After half an hour, open the lid of the cauldron — be surprised by how much juice the onions have released. Turn the heat back to maximum — it's time to sauté the carrots. Add the carrots to the cauldron and stir constantly, preventing the onions from burning, until the carrots become soft and the characteristic aroma of pilaf fills the air.
Step 6
Next, add the tomatoes — sauté them just a little, just enough to release their juice.
Step 7
Then add the peppers — they should not be sautéed at all, just warmed slightly.
Step 8
Once everything is added, reduce the heat back to medium and pour in boiling water just enough to slightly cover the contents of the cauldron.
Step 9
Adjust so that everything simmers very slowly. On top, place the potatoes, whole heads of garlic, and apples. I have previously removed the cores from the apples.
Step 10
Generously salt the potatoes and add any herbs you have on hand (basil goes very well with this dish). Cover tightly with a lid again and let it simmer for about an hour.
