Step-by-Step Guide
Step 1
Rinse the duck and stuff the cavity with spices (dried orange peels, star anise, allspice).
Step 2
Place the duck in a roasting pan and coat it with a mixture of honey, vinegar, and salt.
Step 3
Slow roast in the oven for 2 hours at 340°F, and then for another 1 hour at 410°F.
