Ingredients

  • Honey 4 spoons
  • Duck Breast 4 pieces
  • Toasted Sesame 2 spoons
  • Olive Oil 0 fl oz
  • Soy Sauce 1 tablespoon
  • Vegetable Oil 0 fl oz
  • Lemon 1 piece
  • Lime 1 piece
  • Cilantro 0 oz
  • Papaya flesh 20 oz

Step-by-Step Guide

Step 1

Make deep cuts in the duck skin with a sharp knife. Three to four cuts along the entire length of the breast. Heat a grill pan until it's very hot. Drizzle a little vegetable oil on it. Spread the oil evenly across the surface of the pan.

Step 2

Sear the duck breasts skin-side down until the skin is golden brown.

Step 3

Prepare the sauce by mixing olive oil, lemon juice, lime juice, lime zest, soy sauce, a spoonful of honey, a handful of sesame seeds, and a bit of chopped cilantro. Peel the papaya, remove the seeds, dice it into small cubes, and toss it with the sauce.

Step 4

Remove the duck from the skillet and drain off any excess duck fat. Brush the breast with honey and coat it in sesame seeds. Sear for a couple more minutes, this time cooking the meat side without the skin. Then slice it thinly, drizzle with sauce, and serve with papaya.
