Ingredients
- Duck 5 lbs
- Oranges 6 pieces
- Apple 1 piece
- Canned Pineapple Chunks 2 slices
- Apple Wine 5 fl oz
- Lemon 1 piece
- Honey 2 tablespoons
- Olive Oil 2 tablespoons
- Rosemary a pinch
- Thyme 0 oz
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Rinse the bird well and pat dry with paper towels.
Step 2
Juice 4 oranges.
Step 3
Mix half of the juice with the juice of 1 lemon, honey, salt, pepper, and spices.
Step 4
Marinate the duck in the mixture and leave it in the refrigerator overnight.
Step 5
Slice 2 oranges, the pineapple (2 slices), and the apple into wedges.
Step 6
Place the duck in a greased baking dish and stuff it with the fruits, securing with toothpicks or sewing with thread.
Step 7
Bake at 390°F for about 2 hours.
Step 8
Meanwhile, pour honey into a pot, add wine, and the remaining orange juice.
Step 9
Simmer for 15-20 minutes.
Step 10
10 minutes before the bird is ready, brush it with the glaze.
