You can use either fresh or frozen cherries.

  • Duck 5 lbs
  • Cherry 20 oz
  • Red Grape Juice 1 cup
  • Ground Black Pepper to taste
  • Salt to taste
  • Vegetable Oil 5 fl oz

Step-by-Step Guide

Step 1

Rub the duck with salt and pepper and place it in the oven. Roast for 40 minutes, constantly basting with oil.

Step 2

Pit the cherries and simmer them in red wine; 10 minutes before the duck is done, pour the wine with cherries over the duck, and season with salt and pepper again.

Step 3

Serve the duck hot along with the sauce that formed during simmering.
