
Duck with Baked Apples, Pear, and Cornelian Cherry Sauce

Description
You can use any part of the duck for cooking, whichever you prefer.
Ingredients
- Duck wings 10 oz
- Honey 3 tablespoons
- Red Grape Juice 0 fl oz
- Garlic 3 cloves
- Onion 1 head
- Sugar 7 tablespoons
- Thyme 0 oz
- Cornelian Cherry 5 oz
- Apple 1 piece
- Pear 1 piece
- Butter 0 oz
- Tarragon 6 pieces
Step-by-Step Guide
Step 1
Scald the duck leg and clean it well. Marinate in a mixture of honey, wine, ground garlic, adding salt and pepper to taste. Leave at room temperature for 6 hours.
Step 2
Then prepare the onion 'bed': chop the onion coarsely, place it in a tray, and sprinkle with sugar. Place the duck leg on the onion 'bed', rub with thyme and finely chopped garlic, and bake for 2 hours covered with foil at 285°F.
Step 3
For serving: Cut balls from the pear and apple, sauté in butter until golden, add a little honey, salt, and pepper to taste.
Step 4
To prepare the sauce, place the cornelian cherry in cold water, bring to a boil, add sugar, and simmer for 2-3 minutes. Then strain, place in a blender for a couple of minutes. The sauce is ready.
Step 5
Serve garnished with a sprig of tarragon along with the fruit balls.
