Description

I recommend using local beer. It turns out best with Baltic No. 5. You don't have to sew up the duck. It will just be a bit harder to turn the bird. In this recipe, you can't ruin the duck. It will always be tender, and all the excess fat will render away with the beer. You can also experiment with the spices. This recipe has been tested over 20 times.

Ingredients

  • Duck 5 lbs
  • Ground Black Pepper 1 teaspoon
  • Salt to taste
  • Light Beer 15 fl oz
  • Pickled Apples 4 pieces

Step-by-Step Guide

Step 1

Take a thawed, cleaned duck and rub it with salt and pepper.

Step 2

Cut the apples into wedges, about 4-6 pieces each. Remove the cores with seeds.

Step 3

Salt the inside of the duck and stuff it with the apples. If desired, sew up the bird with thread or secure it with toothpicks.

Step 4

Place the duck in a roasting pan or any oven-safe pot with a lid, breast side up.

Step 5

Pour the beer over the duck and place it in an oven preheated to 180-375°F for 1 hour.

Step 6

After an hour, turn the bird over and leave it in the oven for another hour.

Step 7

Check if the duck is browned enough. If not, remove the lid and let the duck brown for another 5-10 minutes.

Step 8

Remove the duck from the roasting pan and serve it on a plate along with the apples. Any side dish of your choice.
