Duck with Apples Baked in a Sleeve
Ingredients
- Duck 5 lbs
- Apple 0 lbs
- Salt 5 oz
- Garlic 1 head
- Bay leaf 5 pieces
- Green peppercorns 0 oz
- Allspice berries 0 oz
- Ground coriander to taste
Step-by-Step Guide
Step 1
Prepare the necessary ingredients.
Step 2
In a separate container, pour in 2 liters of water, bring to a boil, add 100 grams of salt, 1 head of garlic, 5 bay leaves, 10 allspice berries, 10 black peppercorns, and ground coriander to taste. Boil the spices for about 5–7 minutes with the lid on. Allow to cool to room temperature without removing the lid.
Step 3
Soak the duck in cold water for 1.5 hours.
Step 4
Drain the water from the duck. Wash the duck well and remove any excess.
Step 5
Pour the cooled brine over the duck and let it marinate for about 8–10 hours in a cool place.
Step 6
Before removing the duck from the brine, wash the apples well, cut them into quarters, and remove the core.
Step 7
Remove the duck from the brine and stuff it with the prepared apples.
Step 8
Place the duck and remaining apples in a roasting sleeve, tie the ends of the sleeve, and make a few holes on top with a toothpick. Place the duck in the sleeve on a baking tray and send it to the oven preheated to 355°F.
Step 9
Bake the duck with apples in the oven for about 1 hour and 50 minutes.
Step 10
Remove the cooked duck from the oven and carefully cut open the sleeve.
Step 11
Serve the duck with apples hot or warm.
