Ingredients

  • Duck 1 piece
  • Salt to taste
  • Ground Black Pepper ½ teaspoon
  • Garam Masala 2 teaspoons
  • New Potatoes 5 lbs
  • Onion 1 head
  • TABASCO® 3 dashes
  • Olive Oil 2 tablespoons
  • Garlic 2 heads
  • Vegetable Oil 2 tablespoons
  • Port Wine 1 cup
  • Pickled Apples 20 oz

Step-by-Step Guide

Step 1

Gut the duck, wash it thoroughly, and scald it with boiling water; pluck if necessary.

Step 2

Prepare the sauce. Peel and chop the onion. Wash the duck offal and neck, dry them, and sauté with the onion in 2 tablespoons of heated vegetable oil for 5 minutes.

Step 3

Pour in the port wine and cook until the liquid evaporates completely. Add 0.5 cups of water and simmer on low heat for 40 minutes. Season with salt and pepper.

Step 4

Remove the duck neck, transfer the remaining contents of the pan to a blender, and puree. Pour into a sauceboat and keep warm until serving.

Step 5

Wash the apples, cut them into quarters, and remove the cores.

Step 6

Peel the garlic, then cut it into pieces, combine with the apples, sprinkle with salt and garam masala, and mix.

Step 7

Stuff the duck with the apples and garlic, and sew up the incision.

Make several punctures in the duck skin with a fork to allow excess fat to escape during roasting.

Mix olive oil, TABASCO, black pepper, and salt. Rub the duck with the resulting mixture.

Place the duck in a roasting bag and lay it on a baking sheet.

Roast for 1 hour 30 minutes at 190 °C.

Then cut the bag, place the washed and halved potatoes on the oven rack, and continue cooking everything together for another 40 minutes.

Step 13

Serve the duck with the sauce and roasted potatoes.
