Duck with Apples
Ingredients
- Duck 1 piece
- Ground Black Pepper to taste
- Apple 9 pieces
- Bay leaf to taste
- Cinnamon to taste
- Nutmeg to taste
- Meyer Lemon Juice 1 tablespoon
- Salt to taste
Step-by-Step Guide
Step 1
Rinse the duck and pat it dry with a paper towel. Rub the duck with salt and pepper. Place 3–4 apples, cinnamon, nutmeg, and a bay leaf inside the duck. Put the duck in a baking dish and drizzle with lemon juice.
Step 2
Preheat the oven to 430°F and place the duck in a roasting pan inside. Roast the duck for one hour, occasionally removing the pan to baste the duck with the fat that has rendered from the meat.
Step 3
After an hour, reduce the oven temperature to 320°F, place the remaining apples in the dish with the duck, drizzle them with the rendered duck fat, and bake for another 20 minutes.
