Ingredients

  • Duck 1 piece
  • Rosé Dry Wine 10 fl oz
  • Honey 3 teaspoons
  • Antonovka apples 3 pieces
  • Salad Potatoes 6 pieces
  • Ground Black Pepper to taste
  • Salt to taste
  • Lingonberry to taste

Step-by-Step Guide

Step 1

Pour the wine into a saucepan, add honey, and simmer over low heat until the liquid volume is reduced by half. Then add butter, season with salt and pepper to taste, and remove from heat.

Step 2

Cut the apples into quarters, remove the core, pour some of the wine sauce over them, and mix.

Step 3

Wash the duck, pat it dry, and rub it with salt and pepper. Stuff the cavity with the apple mixture. Secure the opening with wooden skewers. Brush the duck all over with the remaining wine sauce.

Step 4

Place the duck on a baking sheet (we also lined it with foil) breast side up, add 50 ml of water, and put it in the preheated oven. Roast it first at 390°F, then at 340°F, and towards the end, increase to 430°F for a crispy skin. Roast for about two hours. About forty minutes before it’s done, add the potatoes to the baking sheet with the duck.
