Ingredients

  • Duck 1 piece
  • Onion 3 heads
  • Ground Black Pepper ½ teaspoon
  • Tomato Puree 1 tablespoon
  • Red Long Chili Peppers ½ teaspoon
  • Garlic 5 cloves
  • Bay leaf 2 pieces
  • Salt to taste

Step-by-Step Guide

Step 1

Cut the processed duck into pieces and fry in duck fat until a golden crust forms.

Step 2

Then place in a saucepan, cover with water just enough to submerge the duck pieces, and stew for 20 minutes.

Step 3

Finely chop the onion, lightly fry in the same fat used for frying the duck, add the tomato puree and continue frying until the tomato thickens.

Step 4

Add the previously toasted wheat flour, pour in the juice that formed while stewing the duck, mix thoroughly, add salt, pepper, and bay leaves, and bring to a boil.

Step 5

Pour the resulting sauce over the duck and stew until cooked through.

Step 6

When serving, add grated garlic to the sauce.
