Duck Leg Confit
Ingredients
- Duck wings 3 pieces
- Olive Oil 3 tablespoons
- Green peppercorns 1 tablespoon
- Fresh Rose Hips 2 sprigs
- Flaky sea salt 3 tablespoons
- Ground Black Pepper 1 tablespoon
Step-by-Step Guide
Step 1
Wash and dry the duck legs.
Step 2
Rub with coarse salt and refrigerate for 12 hours to cure.
Step 3
Rinse the legs, dry them, and place them in a ceramic baking dish. Add pink peppercorns, a sprig of rosemary, ground black pepper, and optionally 1 clove.
Step 4
Add olive oil.
Step 5
Preheat the oven to the lowest temperature, place the duck legs inside, and cook for 4–5 hours (the duck fat will render quickly, and it will cook in its own fat).
