Ingredients

  • Duck 1 piece
  • Onion 1 head
  • Chicken Broth 10 fl oz
  • Celery salt 1 piece
  • Lemon ½ piece
  • Rosé Dry Wine 10 fl oz
  • Wheat Flour 2 tablespoons
  • Salt to taste
  • Ground Black Pepper to taste
  • Grapefruits 1 piece
  • Vegetable Oil to taste

Step-by-Step Guide

Step 1

Cut the duck into small pieces and rub with salt and pepper. Heat a large skillet and add vegetable oil. Lightly fry the meat until golden brown for about 5 minutes.

Step 2

Transfer the duck to a large pot and add the broth, finely chopped onion, celery root, and grated lemon zest. Bring to a boil, cover, and simmer until cooked through for about 1.5 hours. The cooking time depends on the size and age of the duck.

Step 3

Transfer the duck to a serving dish. Heat a small skillet, add vegetable oil, and lightly fry the flour. Add the flour to the duck sauce, pour in the red wine and lemon juice. Mix well, breaking up any lumps, then add the duck back in and simmer for another 10 minutes. When serving, garnish each piece with grapefruit flesh.
