Duck in Paprika Crust

Ingredients
- Oranges 4 pieces
- Grapefruits 1 piece
- Lemon 2 pieces
- Duck 1 piece
- Paprika 6 tablespoons
- Olive Oil 5 fl oz
- Garlic 4 cloves
- Spanish onions 1 head
- Cilantro 0 oz
- Brandy 5 fl oz
- Sugar 2 tablespoons
- Salt to taste
Step-by-Step Guide
Step 1
Peel the citrus fruits and separate them into small segments, removing all membranes.
Step 2
Wash the duck and singe it. Chop the ginger and onion.
Step 3
In a skillet, heat the butter and add a bit of brandy. Sauté the chopped onion and ginger until they soften. Add a bay leaf, season with pepper and salt, and add sugar. Simmer a bit more.
Step 4
Place the prepared duck on a baking sheet. Generously coat it with vegetable oil. Season with salt and generously sprinkle with paprika. Stuff with the filling, leaving some sauce for serving.
Step 5
Preheat the oven to 390°F and roast the duck for one hour.
