Description
Duck Breasts with Pepper in Blueberry Sauce
Ingredients
- Sugar ¼ cup
- Water 2 tablespoons
- Chicken Broth 1½ cups
- Balsamic Vinegar 2½ tablespoons
- Dried Turkey 1 cup
- Grated Ginger Root 1 tablespoon
- Duck Breast 2 pieces
- Ground Black Pepper 4 teaspoons
- Butter 2 tablespoons
- Frozen Raspberries ¾ cup
Step-by-Step Guide
Step 1
In a small saucepan, combine sugar and water and place over low heat until the sugar dissolves. Increase the heat and boil without stirring for about 8 minutes, until it reaches a caramel state. Add the vinegar, then the broth, and simmer for about 20 minutes until the volume reduces to 1 cup. Remove from heat and add finely chopped dried fruits and ginger. Let it sit for 30 minutes.
Step 2
Meanwhile, poke the skin of the duck breasts in several places with a fork, being careful not to pierce the meat. Season with salt and generously rub with pepper. Heat a skillet over medium heat and place the meat skin-side down, cooking until golden and crispy, about 15 minutes. Flip and cook for another 8 minutes for medium doneness. Transfer to a plate and let rest for 10 minutes.
Step 3
Reheat the sauce over low heat. Add the butter in small pieces, then the blueberries. Season with salt and pepper.
Step 4
Slice the duck breasts and serve with the sauce.
