Duck Breast with Shirataki Rice

Ingredients

  • Duck Skin 2 pieces
  • Shirataki Rice 5 oz
  • Onion 1 piece
  • Marinated cherries 10 pieces
  • Olive Oil 3 tablespoons
  • Soy Sauce 0 fl oz
  • Mustard Greens 1 tablespoon
  • Grated Ginger Root 1 teaspoon
  • Chicken Seasoning 1 teaspoon
  • Garlic 2 cloves
  • Lemon 1 piece
  • Toasted Sesame to taste
  • Salt to taste

In a deep bowl, mix the garlic, pressed through a garlic press, olive oil, soy sauce, lemon, mustard, ginger, and poultry seasoning.

Generously coat the duck breast on both sides and place it skin-side up in a hot skillet.

After 4-5 minutes, flip it over. Sear for another 5 minutes on high heat.

Wrap the duck in a roasting bag and place it in the oven for 25 minutes at 355°F.

In the sauce left in the skillet, sauté the onion until golden brown. Then transfer it to a bowl.

In the same skillet, sauté the cherry tomatoes for 3-4 minutes. Also transfer to the bowl.

Place the shirataki rice in the skillet and sauté for 3 minutes on high heat, stirring occasionally.

Combine the shirataki with the onion and tomatoes, sprinkle with sesame seeds. Add salt if needed.
