Duck Breast with Mandarin Chutney
Ingredients
- Duck Breast 5 oz
- Olive Oil 1 teaspoon
- Rosemary 1 sprig
- Ocean salt to taste
- Mandarins ½ piece
- Grated Ginger Root ½ teaspoon
Step-by-Step Guide
Step 1
Carefully peel the mandarin, removing the skin and white fibers.
Step 2
Make incisions in the duck skin with a sharp knife.
Step 3
Place the duck breast skin-side down in a hot skillet. Season with salt.
Step 4
In another skillet, heat the olive oil.
Step 5
Add the sprig of rosemary to the rendered fat.
Step 6
Finely chop the mandarin and add it to the hot oil. Set to medium heat.
Step 7
Once the bottom side of the duck is browned, flip it and season with salt. Reduce heat to medium.
Step 8
Season the mandarin with ground ginger and stir.
Step 9
Cover with a lid and simmer for about 7 minutes.
Step 10
After 5 minutes, position the duck breast on its side. After another 3-5 minutes, position it on the other side.
Step 11
After 5 minutes, the duck breast is ready. Transfer to a plate, add the chutney, and serve.
