Description

Goes well with mashed potatoes, but that's a personal choice!:-)

Ingredients

  • Ground Cinnamon a pinch
  • Skin-On Chicken Breasts 4 pieces
  • Chicken Seasoning 6 teaspoons
  • Black Currant Jam to taste

Step-by-Step Guide

Step 1

Wash the breasts and pat dry with a towel.

Step 2

Make cross cuts in the skin with a sharp knife, being careful not to touch the meat, then rub the breasts with spices (seasoning + cinnamon) on the other side.

Step 3

Place the breasts skin-side down in a dry skillet and render the fat over low heat until the skin turns golden.

Step 4

Transfer the breasts to a heatproof dish, drizzle with the rendered fat, cover with foil, and place in a preheated oven at 180–390°F until cooked (to make the duck tender, it should be cooked for about 40 minutes).

Step 5

Serve the cooked breasts one at a time on a plate, drizzle with a tablespoon of its own juices, and place 2 tablespoons of jam next to it.
