Duck Breast in the Oven
Ingredients
- Duck Skin 1 piece
- Sumac ½ teaspoon
- Garlic 0 oz
- Fresh Rose Hips 1 sprig
- Ocean salt to taste
Step-by-Step Guide
Step 1
Crush the garlic with a chef's knife. Break the rosemary sprig in half.
Step 2
Make incisions in the duck skin, being careful not to damage the fillet.
Step 3
Place the fillet skin-side down on a dry, hot skillet. Season with salt.
Step 4
Sprinkle with sumac.
Step 5
Add the garlic and rosemary to the rendered fat.
Step 6
Once the skin is nicely browned, flip it over and season with salt. Sprinkle with sumac.
Step 7
Reduce the heat to medium and add butter.
Step 8
After 3 minutes, remove from heat. Place the garlic and rosemary in a baking dish.
Step 9
Top with the duck and place in a preheated oven at 320°F for 10 minutes.
Step 10
Transfer to a plate, slice, and serve.
